I wanted to make meatballs from scratch and asked my friend if she had a recipe. She sent me one over instant messenger and I’m not sure if this is her recipe or something she ganked from the Internet. So, I can’t give credit where credit is due, because I’m not sure whose recipe this is. I do want to say that my entire family loved it in their spaghetti and I would make this again. Two thumbs up!
As usual, I had to improvise on the ingredients. It was cold outside and I did not feel like going to the store. I didn’t have any of the meats on the ingredients list, but I did have 2 pounds of Bubba Burger patties in the freezer. I bought the ones with sweet onion. Anyway, that’s what I decided to use and it turned out great. Of course, I had to adjust the rest of the ingredients since the recipe only calls for 1 1/2 pounds of meats and I had 2, but you get the idea.
Ingredients for Baked Meatballs:
1 tablespoon of olive oil
1/2 onion, finely chopped
3 garlic cloves, minced
1/2 lb of ground veal
1/2 of ground beef
1/2 of ground pork
1/2 cup of grated Parmesan cheese
2 medium eggs
1/2 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
Preparation: Preheat your oven to 375 degrees Fahrenheit
In a skillet, over high heat, cook the onion for 5 minutes or until softened. Add the minced garlic and cook for 1 minute.
Transfer to a bowl and mix in ground meats, grated Parmesan, eggs, salt and black pepper.
Shape into balls and place in a baking dish. This recipe makes a lot of meatballs and I had to use two baking dishes.
Bake in the oven up to 30 minutes or until cooked all the way through.
