For the past few nights, I haven’t been in the mood to cook or even eat for that matter. I’m hungry, but I don’t want to eat anything in particular. The only thing that sounded good to me was bacon and rice. As children, my mom use to fry up bacon and serve it to us with rice for dinner. It’s not such a bad combination if you think about it. Salted pork and rice. Anyway, it’s one of my most favorite meals of all time and that’s what I’ve been eating for dinner. Every night. Bacon and rice. You can add a little hot sauce or soy sauce. I like to add hot chili oil, because it gives it an extra kick.
It’s just good and really simple. You should try it if you have bacon and rice on hand. I probably shouldn’t eat bacon since I have cholesterol problems, but I’m too tired to make anything else. It’s either this or ramen noodles.

At first I grimaced when I read this….but then I thought about what my mom used to serve for dinner growing up–raw egg yolk over rice. Rock on with your bacon, Cathalee.
I’ve had fried egg with rice, but never raw. Is that good?
